Farmer Jay’s Favorite Fall Harvest Snack: Scotcheroos
Special K Bars (also known as Scotcheroos)
Chewy peanut butter bars with a smooth, rich chocolate/butterscotch frosting on top.
Bars
1 cup granulated sugar
1 cup light corn syrup
1 cup creamy peanut butter
6 cups Special K cereal
Chocolate frosting
1 cup semi-sweet chocolate chips
1 cut butterscotch chips
Make the bars
- Grease a 9 × 13-inch pan or line it with parchment paper.
- In a large saucepan, heat the sugar and corn syrup over medium heat, stirring until the sugar dissolves and the mixture just begins to bubble around the edges. Don’t let it boil hard—that can make the bars tough.
- Remove the pan from the heat and stir in the peanut butter until smooth.
- Gently fold in the Special K until coated. Press the mixture into the pan with a buttered spatula, just firmly enough to hold together.
Make the frosting
- Put chips in glass bowl and microwave 45 seconds, stir - continue microwaving at 45 second increments until melted, stir until smooth and spread over top of bars.
Let the bars cool completely before cutting. For neat slices, wipe the knife between cuts.
