Homemade Brioche Bread

From My Kitchen to Yours.

There's something special about homemade bread. The smell filling the house, the anticipation while it bakes, and that first warm slice with a little butter melting into it... it just feels like home.

After trying several recipes, this brioche loaf has become one of our absolute favorites. It's soft, rich, buttery, and makes wonderful sandwiches, toast, and French toast. It's one of those recipes I find myself making again and again because it never lasts long around our house!

I hope it becomes a favorite in your home, too.

Ingredients

  • 4 large eggs, room temperature
  • ¼ cup milk, room temperature
  • 1 teaspoon vanilla extract (optional)
  • 3¾ cups bread flour
  • ¼ cup granulated sugar
  • 1 teaspoon salt
  • 2 teaspoons instant yeast
  • ½ cup unsalted butter, softened

Egg Wash

  • 1 egg
  • 1 tablespoon water

Instructions

Step 1

Add the eggs, milk, vanilla (if using), bread flour, sugar, salt, and yeast to your bread machine pan according to your manufacturer's directions.

Start the Dough Cycle.

Step 2

After the dough has mixed for about 8–10 minutes, gradually add the softened butter, a little at a time, allowing it to fully incorporate before adding more.

Continue the dough cycle until complete.

Step 3

Lightly grease a 9×5-inch loaf pan.

Turn the dough onto a lightly floured surface and divide it into 8 equal pieces.

Roll each piece into a smooth ball and arrange them evenly in the loaf pan.

Step 4

Cover loosely and let rise in a warm place for 45–75 minutes, or until the dough has risen about 1 inch above the rim of the pan.

Step 5

Preheat your oven to 350°F.

Whisk together the egg and water and gently brush over the top of the loaf.

Bake for 30–35 minutes, or until the top is deep golden brown and the loaf reaches an internal temperature of about 190°F.

Step 6

Allow the bread to cool in the pan for about 10 minutes, then remove to a wire rack to cool completely.

(Or... do what I do and sneak a warm slice while it's still cooling! 😉)
